It all starts by asking Giuseppe to match the recipe of an animal-based product. It will analyze the product structure at the molecular level and then replicate it using only plant-based goodness.
Giuseppe is the name of the Artificial Intelligence program developed by NotCo’s team to basically understand everything about the foods we love to eat and look for ways to recreate them but replacing all ingredients that use animal by-products for plant-based ones.
Think about trying to make that unforgettable dinner you had in a restaurant, but at home. Now imagine that all of a sudden you know a lot more: knowledge about thousands of possible ingredients, the molecules that make up each of them, how they interact with each other, which ones create the perfect texture, and which ones combined will smell like milk or beef.

In a world of thousands of delicious foods, what makes us love what we eat are the characteristics of each product, made of specific molecules that make it what it is. Just like Lego™ brick pieces in a Lego™ house.

We can find whatever Legos™ we need to replace the animal-based ones! That is the basis of how Giuseppe works. It analyzes the structure of an animal-based food at its molecular level and replicates it using only plant-based ingredients.
HOW IT WORKS
First, Giuseppe starts generating a bunch of different recipes equivalent to the product we want to recreate. It looks for matches in flavor, texture, nutrition and functionality, among other characteristics.
Each recipe is different and there are some that match better than others.

FEEDBACK: THE KEY OF MACHINE LEARNING
This is one of the most important parts of the development of a NotProduct, where the Chefs and the NotCo Squad try the recipes and give their feedback to Giuseppe, so it can learn and get better in the next iteration.

When we first started, Giuseppe didn’t know that adding dill into a recipe would change its entire color, so we had to teach him to understand colors as well.
Now, it knows that adding dill to a recipe will affect color and considers that in all future developments.
