The principle behind Giuseppe is quite simple: knowing the molecular composition of animal-based ingredients, can we find similar components in the more than 300,000 edible plants out there?
Using AI, we created a food development platform to do exactly that.

NOT A REGULAR TEAM
One of NotCo’s founders and the creator of the first version of Giuseppe, Karim Pichara, leads NotCo’s AI group.
Karim has a PhD. in Computer Science from Universidad de Chile and a Postdoc in Applied Computer Science from Harvard University, where he was also a research associate.
The team has significant engineering power made up of Machine Learning, Software Engineers, Designers, Research Chefs, Food Scientists, and Analytical Scientists, as well as professionals tasked with transferring the technology and scientific discoveries to the rest of the company and external partners.
