Gnocchi with vegan pesto? #Whynot?

Ingredients

  • 16 oz high protein or cauliflower gnocchi

  • 3 cloves garlic

  • ½ cup basil leaves

  • ½ cup parsley

  • ¼ cup pine nuts

  • 1 tbsp olive oil

  • ¾ cup NotMilk™

  • ½ tsp salt

  • ¼ cup vegan Parmesan cheese

Steps

  1. Cook the gnocchi as directed on package or until tender.

  2. Add the garlic, basil, parsley, pine nuts, and oil to a blender or food processor. Pulse until very fine. Add the NotMilk™ and parmesan and pulse until mixed well.

  3. Add the mixture to a pan over low heat and stir until simmering slightly.

  4. Add the gnocchi and any additional cheese. Stir and serve immediately. Enjoy!
