Ingredients

  • 1 7 oz can Chipotle peppers w/ adobo sauce
  • ½ cup non-dairy unsweetened yogurt + more for topping
  • ¼ cup non-dairy mayonnaise
  • ½ lime, juiced
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Garlic powder
  • 2 Not Chicken Pattie’s, sliced
  • Street style tortillas
  • Non-dairy cheese, for topping
  • Lettuce, for topping


Steps

  1. Cook the Not Chicken Patties as directed on packaging. While they cook, make the chipotle sauce.

  2. In a blender or food processor add the chipotle peppers and sauce, yogurt, mayo, lime, chili, cumin, and garlic. Puree until smooth. If you would prefer it to be a bit thinner add 1-2 Tbsp water and puree again.

  3. When the chicken patties are finished cooking, slice into strip and toss with the toss.

  4. Assemble tacos with the tortillas, chipotle chicken slices, yogurt, cheese, and lettuce. Enjoy!
