Enjoy the cold weather with this delicious NotBurger Italian Meatball Soup
Ingredients
For the Meatballs
- 4 Not Co Burger Patties, thawed
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp pepper
For the Soup
- 1 tbsp olive oil
- ½ large onion, diced
- 6 cloves of garlic, minced
- 1 large can crushed tomatoes
- 4-5 cups vegetable broth
- ½ tsp thyme
- ½ tsp oregano
- ½ lbs uncooked pasta of choice
- Meatballs made from above
- Salt & pepper to taste
- Basil to finish
Steps
- Preheat oven to 400º
- Make the meatballs by combining the Not Burger Patties, garlic powder, onion powder, salt and pepper in a medium bowl. Roll into one tablespoon sized bites and cook for 12-14 minutes.
- Start on the soup while they cook. In a large pot add the oil and onions. Cook for 5 minutes over medium heat then add the garlic and cook another 2 minutes. Then add the tomatoes, broth, thyme, and oregano. Brin to a boil.
- When the meatballs have finished add the meatballs and pasta to the mixture. Continue to boil on a low boil until the pasta has finished and is tender.
- Finish with salt, pepper, and fresh basil. Enjoy!
