For the Meatballs

  • 4 Not Co Burger Patties, thawed
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp pepper

For the Soup

  • 1 tbsp olive oil
  • ½ large onion, diced
  • 6 cloves of garlic, minced
  • 1 large can crushed tomatoes
  • 4-5 cups vegetable broth
  • ½ tsp thyme
  • ½ tsp oregano
  • ½ lbs uncooked pasta of choice
  • Meatballs made from above
  • Salt & pepper to taste
  • Basil to finish


  1. Preheat oven to 400º
  2. Make the meatballs by combining the Not Burger Patties, garlic powder, onion powder, salt and pepper in a medium bowl. Roll into one tablespoon sized bites and cook for 12-14 minutes.
  3. Start on the soup while they cook. In a large pot add the oil and onions. Cook for 5 minutes over medium heat then add the garlic and cook another 2 minutes. Then add the tomatoes, broth, thyme, and oregano. Brin to a boil.
  4. When the meatballs have finished add the meatballs and pasta to the mixture. Continue to boil on a low boil until the pasta has finished and is tender.
  5. Finish with salt, pepper, and fresh basil. Enjoy!
