Fight the cold weather with this plant-based Lasagna recipe featuring our NotBurger™.
Ingredients
For the Filling
- 2 cups vegan ricotta or tofu
- 1 cups vegan mozzarella
- ½ cup nutritional yeast
- 2 tsp italian seasoning
- ½ tsp salt
For the Sauce
- 2 Not Co Beef Patties
- 2 (26 oz) jars Marinara Sauce
- 1 tablespoon tomato paste
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 tsp salt
- ½ tsp pepper
For assembly
- 2 cups vegan mozzarella
- No Boil Lasagna Noodles
Steps
- Preheat oven to 350º
- Make the filling by combining all ingredients in a bowl and stirring until well combined. If using tofu, break into small pieces until resembling ricotta cheese. Set aside.
- In a large pan over medium heat add the Not Co Beef Patties and cook for about 5 minutes and break into small pieces. Add the tomato paste and cook for 2-3 minutes.
- Pour in the marinara sauce along with the garlic powder, onion powder, salt and pepper. Cook for 5-10 minutes on medium heat until mixture is warm and combined.
- Now it’s time to assemble. In a large greased 9x13 dish, add about ½ cup of sauce to the bottom of the dish. Layer with noodles, then about 1 cup of ricotta mixture, 1 to 2 cups of marinara, and keep repeating until all the dish is full or you run out of ingredients.
- Cook covered for 30 minutes. Remove cover and cook for another 10-15 minutes or until golden and bubbly.
- Remove and let rest a minimum of 15 minutes before serving. Enjoy!
