Ingredients

Filling

  • 1/4 cups of NotMilk™
  • 3 cups of sweet potato
  • 2 1/4 tbsp of bown sugar
  • 1 tsp of coconut oil (RBD)
  • 1/2 tbsp of vanilla extract
  • 1/2 tpsb of cinnamon powder
  • 1/2 tbsp of ground Nutmeg
  • 1/4 tsp of salt

Steps

  1. Preheat the oven to 390ºF.
  2. Boil the sweet potatoes in a pot until sot. Let cool for 10 minutes and the purée.
  3. In a bowl, mix the purée, NotMilk, brown sugar, vanilla, coconut oil, cinnamon, nutmeg and salt.
  4. Pour the purée in a casserole dish until it is around 1 to 1.5 inches thick.
  5. Cover the casserole with marshamallows and bake at 390ºF for 10 minutes or until golden brown.
