Ingredients
Dough
- 2 cups of almond flour
- 1/2 cup of tapioca starch
- 1/2 cups of coconut oil
- 2 tbsp of maple syrup
- 1/2 tsp of salt
Filling
- 3/4 cup of NotMilk™
- 1/4 cup of maple syrup
- 3 tbsp of cornstarch
- 2 tbsp of vanilla extract
- 2 tbsp of coconut oil
- 1/2 cup of coconut sugar
- 1 1/2 cups of pecans
- 1/4 tsp of salt
Steps
Dough
- Heat the coconut oil in the microwave for 20 seconds.
- Add the almond flour, tapioca starch, maple syrup and salt into a bowl.
- Add the coconut oil and water. Mix with a rubber spatula until a smooth dough. Knead for 5 minutes and set aside in a plastic bag.
Filling
- Melt the coconut oil in a pan. Add the pecans and saute them for 30 seconds.
- Add NotMilk™, cornstarch, coconut sugar, maple syrup, vanilla extract and salt. Stir until everything is well blended.
Serving
- Preheat oven to 365F.
- Cover a springform pan with parchment paper.
- Transfer the dough to the pan and with the palm of your hand ensure it covers the whole pan and it's sides.
- Prick the dough with a fork and bake it for 6 minutes. Let it cool down to room temperature.
- Pour the filling on top of the dough.
- Add pecans to decorate.
