Ingredients

Dough

  • 2 cups  of almond flour
  • 1/2 cup of tapioca starch
  • 1/2 cups of coconut oil
  • 2 tbsp of maple syrup
  • 1/2 tsp of salt

Filling

  • 3/4 cup of NotMilk™
  • 1/4 cup of maple syrup
  • 3 tbsp of cornstarch
  • 2 tbsp of vanilla extract
  • 2 tbsp of coconut oil 
  • 1/2 cup of coconut sugar
  • 1 1/2 cups of pecans
  • 1/4 tsp of salt 

Steps

Dough

  • Heat the coconut oil in the microwave for 20 seconds.
  • Add the almond flour, tapioca starch, maple syrup and salt into a bowl.
  • Add the coconut oil and water. Mix with a rubber spatula until a smooth dough. Knead for 5 minutes and set aside in a plastic bag.

Filling

  • Melt the coconut oil in a pan. Add the pecans and saute them for 30 seconds.
  • Add NotMilk™, cornstarch, coconut sugar, maple syrup, vanilla extract and salt. Stir until everything is well blended.

Serving

  • Preheat oven to 365F.
  • Cover a springform pan with parchment paper.
  • Transfer the dough to the pan and with the palm of your hand ensure it covers the whole pan and it's sides.
  • Prick the dough with a fork and bake it for 6 minutes. Let it cool down to room temperature.
  • Pour the filling on top of the dough.
  • Add pecans to decorate.
