This peanut butter twist on classic shortbread cookies is made with the creamy and delicious NotMilk™.

Santa will need you to leave a few extra out this season!

  • 1/4 cup of NotMilk™
  • 1/2 cup of peanut butter (smooth)
  • 2 tbsp of vanilla essence
  • 1/2 cup of sugar
  • 1 tsp of baking powder
  • 1 cup of wheat flour
  • 1/8 tsp of salt
  • Optional chocolate sauce
    • 1/2 cup of vegan chocolate chips
    • 2 tbsp of peanut butter (smooth)
    • 2 tbsp of maple syrup


  1. Preheat the oven to 350ºF.
  2. Add the peanut butter, NotMilk™and vanilla essence into a bowl.
  3. Heat in a microwave for 20 seconds.
  4. Stir with a spoon until fully mixed.
  5. Add the sugar, flour, baking powder and salt.
  6. Mix everything with a rubber spatula.
  7. Refrigerate the mixture for 30 minutes.
  8. Make little balls with you hands and place them on the oven tin.
  9. Press them with a fork to form a cross.
  10. Bake for 10 minutes at 350ºF.
  11. For the frosting: add all the ingredients into a bowl and heat in a microwave for 20 seconds.
  12. Mix well and make sure you cover every cookie. Done!
