This peanut butter twist on classic shortbread cookies is made with the creamy and delicious NotMilk™.
Santa will need you to leave a few extra out this season!
Ingredients
- 1/4 cup of NotMilk™
- 1/2 cup of peanut butter (smooth)
- 2 tbsp of vanilla essence
- 1/2 cup of sugar
- 1 tsp of baking powder
- 1 cup of wheat flour
- 1/8 tsp of salt
- Optional chocolate sauce
- 1/2 cup of vegan chocolate chips
- 2 tbsp of peanut butter (smooth)
- 2 tbsp of maple syrup
Steps
- Preheat the oven to 350ºF.
- Add the peanut butter, NotMilk™and vanilla essence into a bowl.
- Heat in a microwave for 20 seconds.
- Stir with a spoon until fully mixed.
- Add the sugar, flour, baking powder and salt.
- Mix everything with a rubber spatula.
- Refrigerate the mixture for 30 minutes.
- Make little balls with you hands and place them on the oven tin.
- Press them with a fork to form a cross.
- Bake for 10 minutes at 350ºF.
- For the frosting: add all the ingredients into a bowl and heat in a microwave for 20 seconds.
- Mix well and make sure you cover every cookie. Done!
