Mac n cheese without milk? Yeah we did it! Try this creamy, vegan mac n cheese made with NotMilk™, it’s bound to become a staple in your house!
Ingredients
- 2 cups of NotMilk™
- 2 cups of macaroni pasta
- 1 carrot
- 1/4 cup of cashew nuts
- 1/2 tbsp of salt
- 1/4 tsp of ground pepper
- 1 tbsp of nutritional yeast
- 1/2 tsp of paprika
- 1/8 tsp of nutmeg powder
- 1/2 tsp of ground thyme
- 1/2 cup of tapioca starch
- 1 tbsp of cornstarch
- 1/3 cup of coconut oil
Steps
- In a blender, add the cashews, NotMilk™ and carrots. Blend at high speed for 1 minute. Strain the mix with a strainer.
- Add all the dry ingredients and condiments and blend again.
- Mix for 20 seconds at medium speed.
- Add the coconut oil and blend at medium speed for 2 minutes. Increase to high speed for the last 30 seconds.
- Heat the mixture in a pot until it boils.
- Seperately, cook the pasta and strain.
- Add the cheese mixture and mix well.
- Decorate with chopped cilantro and panko.

You can make this recipe with either NotMiIk™ 2% Reduced Fat or Whole. Enjoy it!
