It all starts when we ask our algorithm, Giuseppe, to match the taste, texture, and smell of an animal-based product. It analyzes the structure at the molecular level and then replicates it using only plant-based goodness.

Giuseppe is the name of the Artificial Intelligence program developed by NotCo’s team to understand everything about the foods we love and recreate them by replacing all animal products with plant-based ingredients.

This is the basics of how Giuseppe Works.

It analyzes the structure of an animal-based food at its molecular level and then  replicates it using only plants-based ingredients.

HOW IT WORKS

First, Giuseppe generates multiple recipes equivalent to the product we want to recreate. It looks for matches in flavor, texture, scent and functionality.

Each recipe is different and there are some that match better than others.

      This is one of the most important parts of the development of a NotProduct, where the Chefs and the NotCo Squad try the recipes and give their feedback to Giuseppe so it can learn and get better and faster in the next iteration.

      When we first started, Giuseppe didn’t know that adding dill into a recipe would change its entire color, so we had to teach him to understand colors as well.

      Now, it knows that adding dill to a recipe will affect color and considers that in all future developments.
